Ya’ll these No-Bake Layer Bites are fantastic!! I made these Friday, and they were so good I had them for dinner which was totally not planned, but just could not stop eating them. 🙂 Peanut butter and chocolate are a perfect marriage and the fact that these bites are clean (mostly) make them guilt free too! The only ingredient (my addition) in these bites that isn’t clean is the colored chocolate covered sunflower seeds. The recipe calls for chocolate chips, but I had the sunflower seeds in the pantry so decided to use them instead.
Enjoy a couple of these with a glass milk or cup of coffee for a delicious snack.

No-Bake Layer Bites

Ingredients
- Base Layer:
- cashews - 1/2 cup
- almond flour or pulsed almonds - 1 cup
- pitted dates - 1 cup
- vanilla extract - 1 Tbsp.
- coconut oil - 1 Tbsp.
- maple syrup - 1 Tbsp.
- mini chocolate chips or other add-in - 2 handfuls
- Peanut Butter Layer:
- rolled oats (for gluten free use gf oats) - 1 cup
- natural peanut butter or other nut butter - 1/2 cup
- maple syrup - 2 Tbsp.
- water - 1 to 2 Tbsp.
- Chocolate Topping:
- coconut oil - 1 Tbsp.
- cocoa - 3 Tbsp.
- Stevia (I use Stevia in the Raw) - 3 packets or enough to sweeten to taste
- shredded coconut, unsweetened or sweetened - about 2 Tbsp or just enough to lightly sprinkle on top
Instructions
- Line a square baking dish with either parchment or plastic wrap. Set aside.
- Â Starting with the base layer. Place all ingredients -- except add-ins -- into the food processor and pulse until well combined. Then place in a bowl and fold in the add-ins.
- Press base into square dish, distributing evenly.
- For the peanut butter layer, put all ingredients in the food processor. Pulse until well combined. The mixture will be dry so add 1 to 3 Tbsp water depending on how moist you want the bars.
- Distribute crumbled mixture over the base and press down evenly.
- For top layer, melt coconut oil and mix in cocoa and stevia.
- Pour over peanut butter layer and spread evenly.
- Top with some shredded ( sweetened or unsweetened) coconut flakes.
- Place in your refrigerator for a few hours to harden up.
- You can cut them into bites, bars, squares, or whatever works for you. Then store there in an air-tight container.
