Slim Sloppy Joe Potatoes

Last Christmas my mom gave me Trim Healthy Mama Cookbook: Eat Up and Slim Down with more than 350 Healthy Recipes. Y’all, their recipes are magical. I don’t know how they do it. Many times, I look at the list of ingredients for one of the recipes and have my doubts. Every single recipe I have ever made from THM is so good. Not only are the recipes delicious, but most of the ingredients are clean and nutrient dense. That’s a win-win in my cookbook.

Trim Healthy Mama is a style of eating that involves combining certain foods together for weight loss. I don’t follow their system so I don’t know all the details. But once upon a time I did Suzanne Somers food combining diet, Somersize, to loose weight after my second son. It worked, but was too darn complicated to maintain long-term.

Although, I don’t follow THM diet plan, I love their recipes. THM has several food products that they promote in their recipes. I have never bought any of their special ingredients, but the recipes are still wonderful.

Before trying this Slim Sloppy Joe recipe, the only Sloppy Joe sauce served in the Hardin household was from a can. Have you ever read the ingredients on a can of Sloppy Joe sauce? In case you haven’t, I’ll share them with you: tomato puree, high fructose corn syrup, distilled vinegar, corn syrup, less than 2% of dehydrated onions, salt, sugar, dehydrated green and red bell pepper, chile powder, spices, tomato fiber, guar gum, wanton gum, locust bean gum (locust?), natural flavors.

I’m not sure which is more disturbing, three different types of sugar or the locust bean gum. Maybe the locusts are added for protein. I’m kidding, there are no bugs in the sauce. At least, I hope not.

These Slim Sloppy Joe Potatoes are so good without the added sugar or bugs. Instead of the traditional bun, I enjoyed the sauce on a baked potato for a gluten-free option. It could also be enjoyed in a lettuce wrap for all you low-carbers. Of course, the sauce is always great on a bun. That’s how my men like it. No potatoes for them unless they are julienned, fried, and served on the side.

Slim Sloppy Joe Potatoes

Ingredients

Instructions

  1. Brown the meat in a large skillet, then briefly remove the meat and drain most of the fat (keep some in for flavor); return the meat to the skillet. (If your meat is lean, there is no need to drain the fat, so you can save time).
  2. Add the Seasoning Blend or onion and sauté for a few minutes, stirring with the meat.
  3. Add the remaining ingredients, stir well, and simmer for 10 minutes.
  4. Serve on a bun, potato, or lettuce wrap.
